PISTACHIO & AVOCADO WARM VEG SALAD

Forget all other salads. This is the one, right here. Not only is it ridiculously easy and quick, but it's also absolutely perfect for this time of year, when the weather's finally changing ... for good, it seems; but we're still not quite ready to give up warm foods just yet - at least I know I'm not. What you have here is your warm-cold, cooked-raw solution. My favourite one so far, by far.
There's nothing much to say about the method. This could easily be a recipe from a 'Cooking for Dummies' series. No offence to all those with brutal cooking skills, but you're going to nail this one. I guarantee. To all the other cooking aficionados ... we all love an easy one, don't we? Plus you can serve this warm or cold and it's still super tasty. You know what that means, right? Yup, you can make this ahead.
Although there is one thing I wanted to mention: your broccoli stem, mhm, that fat little green stumpy stem you normally discard. Not today, not if you have a dog. See, I can't really vouch for your cat's interest in this neglected piece of veg. Ours was quite indifferent to its presence, despite it's pretty presentation. It does look artistic, doesn't it? Like something out of a modern art exhibition.
Our dogs, on the other hand, showed a tad bit more appreciation towards this little green monster. It think it's the little stumpy stumps that do it for them. Whatever the case, they absolutely adored the thing the minute they saw it. By 'adored' I mean 'destroyed, butchered, mutilated, devoured, annihilated'. The photos I managed to take of the said blitzkreig lack in quality but are sufficient proof of the murderous act.
The long-abandoned broccoli stems have now become our cheapest and healthiest and most environmentally-friendly 'bone/toy' solution for our primeval beasts.
As for my husband and I, our favourite thing about this salad is not the stumpy broccoli stem, but the fresh avocado chunks and the salty pistachios. That explains the playlist - I came across the songs as I was writing this post, and I can't stop listening to both of them now! They're both very different but sound reeeeal good.
